This recipe for red wine ice cream gets its flavor from the red wine of your choice. Sweet dessert wines, such as Mavrodaphne, which is made in Greece, and Lambrusco, which is made in Italy, are both good bets.

If you don’t have sweet red wine hanging around the house, use the wine you do have on hand but add about two tablespoons of granulated sugar to the custard when you make it. Red Wine Ice Cream Recipe Adapted from Food & Wine Add the egg yolks to a medium sized metal mixing bowl and whisk gently. Add the cream, milk, and sugar to a medium saucepan. Set the heat on medium and bring the mixture to a simmer. Heat until all the sugar is dissolved. This should take about 4 minutes. Slowly whisk the hot milk mixture into the eggs. Whisk for a few minutes until the ingredients are well combined. Transfer the mixture bake to the saucepan and cook over medium heat, stirring constantly. Keep cooking until the custard thickens. This should take about five minutes. Be careful not to let the mixture heat too quickly or else it will curdle. If for some reason it does curdle, you’ll need to start over. Be careful that the mixture never boils. If it starts to get close, you’ll want to lower the heat.

Remove the custard from the heat. Strain it into a bowl using a wire sieve to remove any lumps that may have formed. Whisk in the red wine and continue whisking until it’s well combined. Cover the mixture with a piece of plastic wrap and place in the refrigerator until it’s fully cooled. This should take at least 1 hour. Freeze the custard in an ice cream machine according to the manufacturer’s instructions. Cover and store in the ice cream in the freezer until you’re ready to serve it. This ice cream is best when served within a few days of making it. Chocolate Red Wine Ice Cream. Follow the recipe listed above. Add 1 tablespoon of sugar and 1 tablespoon unsweetened cocoa powder when preparing the custard. Freeze the custard in the ice cream machine as directed. Strawberry Red Wine Ice Cream. Add 1/3 cup strawberry jam to the custard with the wine after removing the custard from the heat. Freeze the custard in the ice cream machine as directed. You can also do the same thing with raspberry or blueberry jam.
